Papas arrugadas con mojo has been officially chosen as the most representative dish of the Canary Islands, according to a recent study by the Centro de Investigaciones Sociológicas (CIS). Garnering an impressive 73.1% of the votes, this beloved dish has been recognised as the true emblem of Canarian cuisine.


Papas arrugadas, traditionally accompanied by either green or red mojo sauce, emerged as the clear winner, far ahead of other typical Canarian dishes. The study placed Canarian stew in second place with 13.2% of the votes, while sancocho canario, a dish made with salted fish, came in third with 7.6%.
